The water used in food industry, specially in beverage industry, must be in conformity with the specifications needed by the products and with the law of the country. If softening, decarbonatation and denitratation may be done now in France by ion exchange, it is not still possible to use ion exchange for total demineralisation of water in food industry in France. Ultrafiltration and reverse osmosis membranes are then a good alternative of water treatment in food industry.
